New York: It was an one-affair and part of the restaurant’s “Celebrating India” initiative, honouring one signature dish from each of India’s 28 states and 8 Union Territories over 36 weeks.
However, this dish from Odisha quickly sold out, prompting Celebrity chef Vikas Khanna and the team at Bungalow NYC to extend the service to one more day. Here, we are talking about Odisha’s iconic street food, Dahi Bara Aloo Dum.
Vikas Khanna made the announcement through a social media post. “Yesterday, we were completely sold out of our version of Odisha’s iconic Dahi Bara Aloo Dum,” Khanna shared. “But because of the overwhelming love and special requests from our guests, Team Bungalow is extending it for one more day. So tonight, we continue serving this extraordinary delicacy from the streets of Cuttack to the East Village of New York. A dish rooted in memory, spice, comfort, and celebration.”
Dahi Bara Aloo Dum combines soft, yogurt-soaked lentil dumplings (dahi bara) with spiced potato curry (aloo dum), creating a harmonious balance of tangy, sweet, spicy, and comforting flavours typical of Cuttack’s vibrant street food scene.
“A beloved street food from Odisha, where soft dahi bara meets the warmth of aloo dum, layered with spice, sweetness, tang, and memory. This journey begins not with luxury, but with the soul of India’s streets. Which is where most great Indian food was perfected anyway. Not in boardrooms. Not under tasting-menu spotlights. Just generations of people arguing over spice levels near carts and temples,” the celebrity chef wrote, while describing the quintessential street food and the initiative.
