Bhubaneswar: March 20 brings a joyful and heartfelt celebration in Odisha with Pakhala Dibasa. Since its inception in 2015 (with roots in popular initiatives around 2011), this day honours Pakhala—the beloved fermented rice dish that has long been a summer essential for Odias.

This humble yet profoundly comforting meal cools the body amid intense heat while nourishing the spirit with its familiar, soul-soothing qualities. It’s no coincidence that Pakhala Dibasa aligns so perfectly with the International Day of Happiness and comes just two days after World Sleep Day—many Odias swear by its gentle, sleep-promoting effects.

On a sweltering afternoon, a refreshing bowl of Pakhala followed by a peaceful nap is a cherished ritual.

Far more than mere sustenance, Pakhala has been a timeless staple in Odisha for generations: a flavourful, nutritious way to combat the summer swelter while evoking deep feelings of home, heritage, and contentment. For Odias around the world, it represents cultural identity and simple joy.

This year, the festivities are in full swing with families, friends, and communities gathering for lavish spreads, with Dahi Pakhala—the creamy yogurt-enriched variation—taking centre stage alongside an array of classic accompaniments like fried fish, vegetable stir-fries, mashed potatoes and more. These gatherings highlights the dish’s enduring appeal and ability to bring people together.

Pakhala’s Cousins Across India

While Pakhala holds a cherished place in Odia cuisine, similar fermented rice preparations thrive in other regions, showcasing a shared Indian tradition of wholesome, cooling summer foods:

  • West Bengal — Panta Bhat, typically enjoyed with mustard oil, green chilies, onions, and sometimes lemon for a tangy kick.
    Assam — Poita Bhat, often paired with mashed potatoes (Alu Pitika), mustard oil, pickles, and fresh chilies.
  • Chhattisgarh and Jharkhand — Basi Bhat or similar names, commonly served with curd and pickles for added creaminess.
  • Tamil Nadu and Kerala — Pazhaya Sadam or Pazhamkanji, usually mixed with buttermilk and a touch of salt for a refreshing, probiotic-rich meal.

These regional variations underscore how fermented rice has long served as a practical, probiotic-rich solution to hot climates across eastern and southern India—delivering hydration, nutrition, and comfort in the simplest form.
