In this guide, we’ll delve into the practicalities of using dough conditioners, offering a step-by-step approach to ensure resounding success for your baking endeavours.

1. Selecting the Right Dough Conditioner

* Ascorbic Acid (Vitamin C): This powerhouse strengthens gluten, giving your bread a sturdy structure and impressive rise. Imagine it as the scaffolding that supports a magnificent building – ascorbic acid provides the framework for your bread to reach its full potential.

* Enzymes (like Amylase): These speed up fermentation, making your dough rise faster and adding a delightful lightness to your bread. Think of them as tiny catalysts that unlock the full potential of your yeast, creating airy and delicate textures.

2. Mastering the Measurement

Precision is paramount when it comes to dough conditioners. A little goes a long way! Typically, you’ll use a tiny amount, ranging from 0.1% to 0.5% of the total flour weight in your recipe. Grab your kitchen scale – eyeballing it won’t cut it here!
