Bhubaneswar: MasterChef Abinas Nayak recently presented an impressive Pakhala spread with an assortment of over 190 dishes as Odisha celebrated ‘Pakhala Dibasa’ on March 20.
It included more than 15 unique variations of the iconic Pakhala, prepared using local rice varieties, and 12 types of foraged saag. Meetha Pakhala (sweet), Dahi Pakhala (with yoghurt) and Saja Pakhala (fresh rice) were presented along with their contemporary versions.
A variety of delectable side dishes – Chicken Besara Bhajja, Alu Bharta, Saga Bhaja, Chhatu Besara, Macha Bhaja and Ambula Rai – accompanied the Pakhala spread.
“This was not just about creating a record; it’s about honouring our roots and showcasing the beauty of Odia cuisine to the world. Pakhala is more than a dish; it’s a way of life,” said Abinas, the winner of MasterChef 6.
He also highlighted Pakhala’s role as a natural cooling agent and a probiotic powerhouse. “In today’s world, where temperatures are soaring, Pakhala offers a natural solution for gut health and hydration.”
Expressing his admiration, Minister of Odia language, literature and culture, Suryabanshi Suraj said, “It is a delight to witness such a large spread, all procured from across Odisha. Pakhala is a matter of pride for all Odias across the globe, and this initiative surely brings attention to the otherwise overlooked Odia cuisine.”
Abinas along with chef Rachit Keertiman and writer Roshan Bisoi had teamed up with The Crown, IHCL SeleQtions and Bharat Masala for this culinary fest.
